Cookie in a mug

Sometimes I just want a cookie. Not a whole tray full of them. And I don’t want to wait to mix all the badder and let it bake. So when that mood strikes, I turn to my trusty mug. Like a few other mug recipes (here and here) this is super easy and really fast and is sure to satisfy your sweet tooth while entrusting that you don’t consume a whole batch of cookies (or the badder, because c’mon….that’s almost just as good.)

INGREDIENTS:

1 TBSP melted butter
1 TBSP white sugar
1 TBSP brown sugar
3 drops vanilla extract
1 egg yolk
Pinch of salt
1/4 cup flour
2 TBSP chocolate chips

DIRECTIONS:

1. In a mug, microwave the butter until melted

2. Mix in your white and brown sugar

3. Add in the vanilla and egg yolk and mix

4. Slowly combine the salt and flour

5. Stir in chocolate chips

Dough should be similar to a regular batch of chocolate chip cookie dough.

6. Microwave for 40-60 seconds or until cookie is cooked through.

This cookie is simply delightful. I’m not sure if I’ve ever used that word to describe a cookie before but it really is. It is so moist and delicious! I apologize for the crappy pictures. I made this at work one night and I only had my phone to take pictures.

Apple Pie For two

I don’t know about you but I love pie. I love pie more than cake or cookies or brownies. I’d rather have a birthday pie than a birthday cake. Ever try sticking some candles in a pie instead of cake? Pretty sure people give you weird looks. I’m not intoxicated…I just like pie okay?

Ever try to make a pie? That takes some serious work…and time. I’m just not that patient. Until I figured out you can make it really quickly in a mug!

Ingredients:

1 medium apple peeled, cored and finely chopped
7 TBSP milk
3 TBSP flour
1/2 TSP baking powder
Pinch of salt
3 TBSP brown sugar
1 TSP cinnamon
Pinch of nutmeg
3 TBSP melted butter
1 egg

Directions:

1. In a medium glass bowl, combine apple with milk. Microwave for 2 minutes.

2. In the meantime, mix all dry ingredients together.

3. Slowly add the butter to dry mixture.

4. Gradually mix in the cooked apple.

5. Mix in the egg.

6. Divide the batter between two mugs.

7. Microwave each mug for 1 minutes and 20 seconds.

Serve a la mode with some ice cream or whipped cream. Or if you are like me and think its perfect how it is, just eat it plain. This is kind of like an apple pie cake. But I don’t care. It’s still delicious!
